This weather is so perfect for soup, so I indulged myself with my all-time favorite.
3 small carrots
2 small potatoes
1/2 yellow onion
1 can stewed tomatoes
1 bunch kale - deveined
brussel sprouts - 10 or so
okra - 10 or so
1 small can corn
1 small can white beans
1 small can pintos
3 tbs olive oil
coriander to taste
curry (powder) to taste
crushed black pepper to taste
3 bay leaves
12 oz veggie broth (ok to substitute chicken broth if you prefer)
Make sure all veggies are cut to approximately the same size. Add everything except potatoes, carrots, & onions to crock pot.
Saute carrots in olive oil & black pepper.
Saute onions in curry & olive oil- just barely carmelize them
Saute potatoes in coriander & olive oil.
Add to crock pot & let it cook on high for about 4 hours.
Enjoy with cornbread or flax seed crackers (if you are low-carb)
